Pad Thai (パッタイ)

  My homemade dish called "Pad Thai".


Recipe : 3 servings
300 grams flat noodles・・・本当はライスヌードルなのですが平打ち麵(中華麺)
80 grams shelled shrimp・・・むき海老
1/2 onion sliced
200 grams bean sprouts・・・もやし
2 shiitake mushrooms sliced
30 grams Chinese chives cut by 3 cm long・・・ニラ
1 garlic clove finely chopped
1 tbs. nam pla (fish sauce)
1 tsp. oyster sauce
1/2 tsp. sugar
3 grams chicken stock (consomme)

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. After the water comes to a boil, cook noodles for 2 min.
2. Heat 1 tsp. vegetable oil in a frying pan... add garlic, bean sprouts, shrimps, onion and stir-fry till they come to soften
3. Add noodles and seasonings and stir-fry 
4. Finally add Chinese chives

【筆者感想】
これ、ただの焼きそばと思うなかれ!・・・味付けがポイントで、普通のソースじゃ全然ダメ!・・・ナンプラとオイスターソースを使うのがコツ(調合比は各自の好みで)。食べるときにレモン汁(本当はライム汁)を掛けるとなお美味いです!!!

Braised Pork Belly (豚バラ肉のブレゼ)

Braised Pork Belly... yummy!


Fruity, dry and good value... pork goes well with the wine!!

Pizza and vegetable sticks (ピザ野菜スティック添え)

 My homemade dish called "Pizza and vegetable sticks".


Recipe : 3 servings
1 pre-baked pizza crust・・・調理済みピザ生地
1 /2 cucumber sliced
1/3 carrot sliced and boiled
1 small potate sliced and boiled
4 cm long daikon radish sliced

*** sauce ***
Miso mayo dipping sauce
3 tbs. mayonnaise
1 tbs. miso

【筆者感想】
超簡単料理!!出来合いのピザ生地(冷凍又は冷蔵保存)を使って、付け合わせに野菜スティックを添えてみた。味噌マヨソースがピザにも野菜スティックのどちらにもバッチシ合います!!

Mapo tofu (麻婆豆腐)

 My homemade dish called "Mapo tofu with shredded cheese and green onions".


Recipe : 3 servings
1 firm tofu (350 grams)
1 seasoning sauce for mapo tofu (160-200 grams)
50 grams shredded cheese
suitable amount green onions chopped

No direction for cooking...

【筆者感想】
麻婆豆腐とチーズって相性が良いみたい・・・英文の投稿にはたくさん出てきますよ!!変わったところではテクスメクス料理で Mapo tofu nachos なんてのがあるようです。

Banh xeo (バインセオ)

  My homemade dish called "Banh xeo".


Recipe : 3 servings
100 grams ground pork
3 eggs
80 grams shelled shrimp・・・むき海老
1/2 onion sliced
100 grams bean sprouts・・・もやし
pinch salt
pinch pepper
**** sauce****
2 tbs. nam pla (fish sauce)
1 tbs. sugar
1 tbs. lemon juice
1 clove garlic finely chopped
pinch salt

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Cook shrimp with garlic, soy sauce and pepper・・・ガーリックシュリンプ
2. Heat 1 tsp. vegetable oil in a frying pan... add pork, shrimp, onion and stir-fry till they come to color
3. Cook beaten egg in the frying pan... add bean sprouts, pork, shrimp and onion and cook them with the lid on the pan・・・もやしを蒸し焼き状態にする

【筆者感想】
これ、ベトナム料理なんだけど、本物は米粉で作られていて日本のお好み焼きに似ている。熱いうちにソースをかけて食べるんだけど激旨です。

Cabbage Rolls (ロールキャベツ)

  My homemade dish called "Cabbage Rolls".


Recipe : 3 servings
1-2 cabbage leaves・・・柔らかいところを短冊状に切っておく
3 pre-cooked small hamburger steaks・・・冷凍のミニハンバーグで代用
1/2 tbs. chicken stock (consomme)
50-100 ml water
3 tbs. ketchup (tomato sauce)
1 tbs. onion finely sliced
1 tbs. carrot finely sliced

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Steam all ingredients over low heat with the lid on・・・全部を蒸し焼きにする
2. Pick cabbage and hamburger out from the pan・・・キャベツが柔らかくなったところでキャベツとハンバーグを取り出す
3. Roll up the cabbage tightly・・・キャベツをハンバーグに巻き付ける
4. Stir-fry the seasoning mixture till all simmered off・・・残りの水分を飛ばしてソースを作る

【筆者感想】
本格的なロールキャベツは作るのに手間がかかり難しそうなんだけど、これは超簡単しかも失敗はありません・・・おまけに超美味!!

Chanpuru (タマナチャンプル)

 My homemade dish called "Chanpuru".


(注)タマナとはキャベツのことだけど、白菜を使ってみた

Recipe : 3 servings
200 grams pork belly cut by 4cm long
3 - 4 leaves Chinese cabbage・・・白菜の葉3-4枚
200 grams firm tofu・・・木綿豆腐
1/2 onion sliced
1/2 carrot sliced
2 shiitake mushrooms
3 eggs
2 tbs. sake
2 tbs. soy sauce
1/2 tbs. chicken stock (consomme)
pinch salt
1 tbs. vegetable oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat 1 tsp. vegetable oil in a frying pan... add pork and stir-fry till they come to color・・・豚肉は一度取り出しておく
2. Heat 2 tsp. vegetable oil in the frying pan... add onion, carrot, cabbage and shiitake and stir-fry till they come to soften
3. Mix all together and add tofu and stir-fry
4. Pour the seasoning mixture and stir-fry till all simmered off
5. Add beaten egg in the frying pan
6. Sprinkle with bonito flakes if you like

Chicken and Egg Bowl (親子丼)

My homemade dish called "Chicken and Egg Bowl".


Recipe : 3 servings
100 grams ground chicken
3 - 4 leaves Chinese cabbage・・・白菜の葉3-4枚。長ネギより旨味出る
1 enoki mushroom cut by 2cm long・・・旨味が出るキノコ類なら何でもよい
1/4 carrot quarter sliced・・・彩の為、無くても可
3 eggs
200 ml Japanese soup stock・・・和風出汁
2 tbs. sweet sake
1 tbs. soy sauce
1 tsp. sugar
suitable amount green onion

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Combine Japanese soup stock, sweet sake, soy sauce and sugar in a bowl or a measuring cup and mix all together
2. Pour the seasoning mixture in a pan and boil
3. Add the chicken in the pan
4. Add Chinese cabbage and mushroom and cook until they come to color and be tender
5. Add beaten egg and stir until egg is done
6. Stir till all simmered off to your liking  
7. Sprinkle with green onion.

【筆者感想】
挽肉を使うところがミソなんだけど、美味くて食べやすい・・・簡単で失敗がありませんし食が進みますね。軽めの赤ワインにバッチシ合います。

Chicken and Tomato Stew (チキンのトマト煮込み)

My homemade dish called "Chicken and Tomato Stew".


Recipe : 3 servings
300 grams chicken thigh・・・鶏もも肉
1/2 onion sliced
1/2 shimeji mushroom
1 garlic clove finely chopped
400 grams can chopped tomatoes・・・カットトマト缶
2 cubes bouillon beef or chicken・・・固形コンソメ、もちろん粉末でも可(水150mlで溶いておく)
pinch salt
pinch black pepper
2 tbs. all purpose flour
1 tbs. ketchup (tomato sauce)
1 tbs. Worcestershire sauce
1 tbs. sugar
2 tbs. sake
suitable amount parsley
1 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. In a large pan, cook garlic and chicken with salt, pepper and flour till they come to color・・・肉がくっつかないように小麦粉をまぶしておく
2. Add onion and shimeji.・・・肉を一度取り出しておくと焼きすぎることが無い
3. Stir till all soften.
4. Add tomato and consomme.
5. Add ketchup, Worcestershire sauce and sugar.
6. Stir till all simmered off.  
7. Sprinkle with parsley.

Ozoni / Japanese traditional Soup Dish (白味噌雑煮膳)

 I had lunch at a Japanese café in Kamakura today.
New year's spiced sake called "Otoso"
先ずは、新年を祝ってお屠蘇・・・



A Japanese traditional soup dish... yummy !!
京風情の白味噌雑煮膳・・・京風情だとか白味噌なんぞは外人には理解できないので省略(笑)
