Grilled Pork Butt (豚肩ロースのグリル)

 I had lunch at a restaurant serves wine and grills in Machida today.

Grilled Pork Butt with Peach Sauce... 


Light in color and body, but medium acidity and medium finish... very good, fun wine... goes well with peach sauce.

Yuxian Qiezi (魚香茄子、ユイシャンチェズ)

  My homemade dish called "Yuxian Qiezi".


Recipe : 3 servings
200 grams ground pork・・・豚ひき肉
3 eggplants sliced
3 bell peppers sliced・・・ピーマン、カラーピーマンがお薦め
1 tsp. grated ginger
1 clove garlic minced
2 tbs. vegetable oil

*** seasoning ***
1 tbs. soy sauce
1 tbs. sake
2 tbs. sweet sake
1 tbs. tianmianjiang・・・甜麵醬
1 tsp. doubanjiang・・・豆板醬
1 tsp. sugar
1 tsp. potato starch・・・片栗粉
2 tsp. chicken broth mix・・・鶏ガラスープの素

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Make the seasoning. In a bowl stir to combine the seasoning thoroughly.
2. Bring a medium pot of salted water to take out the eggplant's bitterness and then drain.
3. Heat oil in a frying pan and cook the eggplants over medium heat. Set them aside.
4. Add ginger, garlic and peppers in a frying pan and stir-fry.
5. Add ground pork and stir-fry until well cooked. Drain excess oil
6. Add the eggplants and the seasoning and combine well.

【筆者感想】
四川料理(Sichuan cuisine)なんだけど、日本の麻婆茄子(Mapo eggplant)に似ている・・・というか麻婆茄子を作ろうとしたらこれになってしまった。なお、豚肉から出る余分な油は捨てる。ポイントは甜麵醬と豆板醬を効かせてピリ辛に仕上げるところかな・・・

All Asian DX Contest CW 2021

 I had fun in All Asian DX Contest CW at my radio shack in Kamakura on June 20. I ended up with 50 QSOs. I was running about 50W with a homebrew antenna "Vertical with Elevated Radials". All set-up was mobile radio equipment. It worked well, but propagation was poor and I only contacted with some big guns... haha

(注)アンテナはL型・・・逆Lじゃないですよ。給電点、地上高3.4mでエレメント長が10m。10mのグラスファイバーポールで2階ベランダから上げています。固定局(JR1ATA)は相模原にあるので鎌倉自宅で移動運用(JA3LKE/1)してます(笑)。太陽黒点数が14と全くもってどうしようもない悪天候(宇宙天気が・・・)でハイバンドは使い物にならず盛り上がりに欠ける展開でした。

A QSO rate was extremely dull because of the poor condition... hahaha


(注)19日(土)は雨のためアンテナ展開できず・・・移動用の設備なので強風・雨の中では運用できません(笑)。午前中にハイバンドの様子を調べて夕方から適当にオンエアすることに・・・S9振ってくるビッグガンを片っ端から呼んで回るという非効率運用でいつもながらの低得点でした。

Sauteed Italian Flat Beans (モロッコインゲンのソテー)

   My homemade dish called "Sauteed Italian Flat Beans".


Recipe : 3 servings
200 grams Italian flat beans cut into bite-size pieces・・・一口大に乱切り
2 fish sausages・・・ウインナー、ベーコンでも可
1 tbs. mayonnaise
pinch black pepper
pinch salt・・・ハーブソルトがお薦め

*** for butter and soy sauce ***
8 grams butter
2 tsp. soy sauce

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Bring a medium pot of salted water to a boil over high heat. Blanch the beans for about 1 min. and then drain.
2. Cook the sausages over medium heat. Add the beans and cook over high heat until crisp tender.
3. Season with pepper, salt and mayonnaise to taste and serve with parsley and/or tomatoes. 

【筆者感想】
日本ではモロッコインゲンと言っているようですが、欧米ではイタリアのひらさやと言うようです。洋食では炒め物が定番のようで「マヨ炒め」「ガーリック炒め」「バター醤油炒め」などがあるようです。

Beef and potato stew (肉じゃが)

   My homemade dish called "Beef and potato stew".


Recipe : 3 servings
200 grams beef thinly sliced・・・牛肉切り落とし、一口大にカット
3 potatoes cut into bite-size pieces…一口大に乱切り
1 carrot cut into bite-size pieces…一口大に乱切り
1 onion sliced
1 pack shirataki, konjac noodles・・・しらたき
9 snow peas・・・絹さや(さやいんげん)
*** seasonings ***
3 tbs. soy sauce
2 tbs. sake
1 tbs. sugar
1 tbs. sweet sake
300 ml Japanese soup stock・・・和風出汁

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. In a medium pot, boil seasonings and then cook beef.
2. Skim the foam from the surface. And add another ingredients and simmer for 25 min.
3. Place it on the plate and add snow peas.

【筆者感想】
ジャガイモは一口大にカット後水につけて灰汁を抜いておく。しらたきは軽く洗って熱湯に通しておく。絹さやは塩茹でしておく。牛肉は食べやすい大きさにカットし酒を振って寝かしておく。以上の下準備を十分行うのがポイント。調味料は砂糖1:酒2:醤油3が黄金比率。煮崩れを防ぐため、なるべくかき混ぜずにゆっくり煮込む。最初は水分が少ないが、後で野菜から出て来るので焦ってはいけない。


 

Chicken and Basil Stir-Fry (鶏胸肉のバジル炒め)

  My homemade dish called "Chicken and Basil Stir-Fry".


Recipe : 3 servings
300 grams chicken breast・・・鶏胸肉1枚
1 tbs. potato starch・・・片栗粉(コーンスターチでも可)
1 onion sliced
1 tomato coarsely chopped
3 bell peppers sliced・・・赤、緑、黄のピーマン
10 grams basil leaves
1 clove garlic minced
pinch chili pepper finely chopped・・・赤唐辛子を適量(少量で可)
pinch salt・・・ハーブソルトがお薦め
pinch pepper
1 tbs. vegetable oil
1 tbs. soy sauce

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. In a medium bowl, toss chicken with cornstarch until coated and season generously with salt and pepper.
2. In a large pan, heat oil over medium heat. Cook onion, garlic, chili pepper until fragrant. And then cook the chicken until browned, but not cooked completely.
3. Add bell peppers, tomato and stir-fry over medium heat. 
4. Add soy sauce and cooked until chicken is cooked through.
5. Remove from heat and stir in basil leaves.

【筆者感想】
鶏胸肉はまな板に広げ、縦横に細かく包丁を入れ(叩く)適当な長さにスライスし片栗粉をまぶしておく。バジルは大きな葉を飾り用に残しておき、他は微塵切りにして料理に混ぜる。醤油の量はお好みで・・・大さじ1~2杯。トマトで酸味を強くしておくと白ワインとよく合います。

Twice Cooked Pork (回鍋肉、ホイコーロー)

 My homemade dish called "Twice Cooked Pork".


Recipe : 3 servings
200 grams pork belly sliced・・・豚バラうす切り
1/4 cabbage cut into bite-size pieces…一口大に乱切り
3 peppers red, green and yellow sliced
1 shiitake mushroom sliced
10 cm long green onion sliced
1 tsp. grated ginger
1 tsp. doubanjiang・・・豆板醬
1 tbs. sake

***seasoning***
1 tbs. Tian Mian Jiang・・・甜麵醬
1 tsp. sugar
1 tbs. sake
1 tsp. soy sauce
1 tsp. grated garlic
1/2 tsp. potato starch

***others***
potato starch for dusting meat
1 tbs. vegetable oil for sauteing
1/2 tsp. sesame oil for finishing touch

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Prepare the ingredients, cabbage, peppers, mushroom and long green onion.
2. Make the sauce. In a bowl stir to combine Tian Mian Jiang, sugar, sake, soy sauce, grated garlic and potato starch thoroughly.
3. Line up the pork belly slices on a tray and dust with potato starch.
4. Heat vegetable oil in a pan. Cook pork belly till they are lightly browned and set aside. 
5. Add the ginger, doubanjiang in a pan and stir-fry over low heat till the aroma grow stronger. Add peppers, mushroom and green onion over medium heat till the peppers begin to soften.
6. Add cabbage and continue to stir-fry
7. When the cabbage is coated with oil evenly, pour over the sake.
8. When all the vegetables soften, add the cooked pork slices, and turn off the heat, and pour in the sauce. Turing off the heat when adding the seasonings and thicken the sauce evenly.
9. Turn on the heat again and coat the vegetables with the sauce evenly over medium heat.
10. Add the sesame oil and place it on a plate.

【筆者感想】
豚肉は片栗粉を薄くコーティングしておくと型崩れせず調味料が良く付くのだそうです。豚肉を二度調理するというのがポイントみたいですが、手間暇かけるだけあってなかなか美味いです!!

Youlinji (油淋鶏、ユーリーチー)

 My homemade dish called "Youlinji".


Recipe : 2-3 servings
300 grams chicken thigh・・・鶏もも肉1枚
1 tbs. sake
pinch pepper
pinch salt・・・ハーブソルトがお薦め
3 tbs. potato starch・・・片栗粉
1 tsp. vegetable oil
***sauce***
1 tbs. soy sauce
1/2 tbs. sake
2 tbs. sugar
2 tbs. vinegar
1 tsp. sesame oil
green onion sliced
grated ginger

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Place the chicken into the bowl. Add sake, pepper, salt and potato starch and toss to coat with seasonings. Soak it for 10 min.
2. Make the sauce. Stir to combine well and boil.
3. Heat the vegetable oil in a frying pan. Fry the chicken over middle heat for 15 min. 
4. Place the sliced chicken on the dish and pour the sauce over the chicken.

【筆者感想】
鶏もも肉はまな板に広げ、縦横に細かく包丁を入れておく・・・特に厚みがあるところは丁寧に包丁を入れ押さえて全体をなるべく均一な厚さにする。先に準備よく調味料を合わせて煮立てておく。本来は油で揚げるのですが、フライパンでソテーする要領で両面に軽く焦げ目がつくくらいに焼く。片栗粉が薄くコーティングされていると形崩れしにくいのだと思う。
