Sauteed Chicken Breasts (チキンソテー)

My homemade dish called "Sauteed Chicken Breasts".


Recipe : 3 servings
350 grams chicken breasts・・・二切れ、厚く一切れの場合は上下に二つに裂く
6 - 9 cherry tomatoes cut in half・・・ミニトマト
1 avocado diced
1 lemon cut in wedges
suitable amount of lettuce
8 grams butter
1 tbs. olive oil
1 clove garlic minced
pinch black pepper and salt

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Place chicken breasts on a plate. Sprinkle pepper and salt and allow breasts to sit for 10 minutes at room temperature.
2. Heat butter and oil in a pan over medium heat. Add garlic and stir-fry until fragrant.
3. Add the chicken breasts and allow to sit for 10 minutes without touching over lower heat.
4. Flip breasts to the opposite side and cook for another 5 minutes.
5. Heat both sides of breasts over medium high heat to brown the surfaces of breasts.

【筆者感想】
鶏胸肉は平坦ではなく凸凹がありますが、調理用のスティックで調理中に押さえて平坦にします。尖った先で表面を押し込むようにすると結構均すことが出来ます。バター、塩、胡椒だけで充分美味いです。次回は中華風の味付けでもやってみたいと思っています。盛付けは米国の方のホームページを参考にしました。レモンもトマトもチキンソテーによく合いますね!辛口の白ワインにバッチシ合います!

Tomato Sukiyaki Bowl (トマトすき焼きそぼろ丼)

 My homemade dish called "Tomato Sukiyaki Bowl".


Recipe : 3 servings
300 grams ground beef・・・牛挽肉、合い挽き肉でも可
1 tomato diced
suitable amount of green onions・・・小口切り
1.5 tbs. sake
1.5 tbs. sugar
3 tbs. mirin (sweet sake)
2 tbs. soy sauce
1 tbs. ground ginger

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Cook ground beef over medium heat in a large pan. 
2. Add seasonings and stir-fry.
3. Finally add tomatoes and combine well.
4. Put rice on a dish and arrange the beef mix and green onions top on the dish.

【筆者感想】
Instagramで公開されているKuritomoさんのレシピを参考にしました。とっても簡単、速攻で作れますが激旨です!!醤油控えめで砂糖とみりんがキモです。調味料を加える前に挽肉から出る油をキッチンペーパーで吸い取っておくと上手く出来ます。作者は米国在住の方なので米国ではこのような物もすき焼きと言うのでしょう?

Garlic Pork Fried Rice (ガーリックポークライス)

My homemade dish called "Garlic Pork Fried Rice".


Recipe : 3 servings
250 grams pork scraps・・・豚小間切れ、サイコロ、薄切りなど
150 grams frozen mixed vegetables
1 avocado diced
9 cherry tomatoes・・・ミニトマトです
1 clove garlic sliced
3 cups cooked rice・・・茶碗軽く3杯
16 grams butter
1 tbs. soy sauce
1 tsp. oyster sauce・・・dark soy sauce, nam pla などでも可
1 tbs. sake
pinch salt and black pepper

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Marinate the pork in sake with pinch salt. 
2. Heat butter over medium heat in a large pan. Add garlic and stir-fry until cooked.
3. Add the marinated pork and stir-fry until cooked.
4. Add rice and vegetables and mix all ingredients together. Add seasonings to taste and stir-fry.
5. Put tomatoes and avocado on top of the rice mix.

【筆者感想】
ニンニクは一欠けらしか使いませんでしたが、他の人のレシピを見ると三~四欠けらぐらい使っている人もいるので好みで量を増やしてください(多い方が美味いと思う)。ミックスベジはどっさり入れた方が良いです・・・コーンだけというレシピの方もいますね。胡椒や魚醤、溜醤油はアクセントなので好みで量を変えてください。醤油味のポークとトマトの酸味が絶妙でとっても美味いですよ!濃厚な赤ワインと相性抜群!

Ozoni / Japanese traditional soup dish (白味噌雑煮膳)

 I had lunch at a Japanese café in Kamakura today.


(注)鎌倉小町にある 和cafe & ぎゃらりー 伊砂・・・オーナー夫妻が私と同じ京都出身で、我々と同年代で、ちょっと小粋な店です。和服、伝統的な調度品、三味線なんかに興味がある人にはお勧めですが、それ以外の人は馴染めないかも?。

Chinese Tomato Egg Stir-Fry (西紅柿炒鶏蛋)

  My homemade dish called "Chinese Tomato Egg Stir-Fry".


Recipe : 3 servings
1.5 - 2 tomatoes cut into wedges
3 - 5 eggs beaten
1 tsp.  sugar
3 grams chicken broth mix・・・顆粒チキンスープの素
pinch salt
2 tbs. vegetable oil・・・1杯はトマトを炒める、1杯は卵を炒める 
suitable amount of green onions・・・小口ねぎ

garnish:
suitable amount of coriander (cilantro)・・・パクチー、パセリなどなんでも
1 lime cut into wedges・・・ただの飾り(笑)

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat oil over medium heat in a pan. Add beaten egg, chicken broth mix and stir-fry until almost cooked.
2. Heat oil over medium heat in another pan. Add tomatoes, green onions and stir-fry until cooked.
3. Combine egg mix with tomatoes and stir-fry.
4. Sprinkle salt over egg mix to taste.

【筆者感想】
西紅柿=トマト、鶏蛋=鶏卵
フライパンを二つ使います。一つの方で炒り卵を作りますが取り敢えず半熟状態で一度火を止めます。もう一つの方でトマトを炒めます。あまり形にこだわると上手くいかないので、ちょっとばらけても良いので大胆に炒めます。半熟状態で一度止めてあった炒り卵にトマト(とトマトから出たエキスも)を加えてさらに炒めます。簡単朝食にいいですよ!!
(注)卵とトマトを同時に炒めるとトマトから出る汁で上手く出来ない・・・為念。

Khao Pad Goong (カオパットクン、海老炒飯)

  My homemade dish called "Khao Pad Goong".


Recipe : 3 servings
3 cups cooked rice・・・茶碗軽く3杯
15 boiled prawns・・・ボイルむき海老
1 onion diced
6 cm carrot diced
1 clove garlic minced
suitable amount of green onions・・・小口ねぎ
3 eggs beaten
1.5 tbs. nam pla (fish sauce)
1 tsp.  sugar
3 grams chicken broth mix・・・顆粒チキンスープの素
pinch salt and black pepper
suitable amount of chili red pepper
3 tbs. vegetable oil・・・1杯は海老を炒める、2杯はライスを炒める
suitable amount of coriander (cilantro)・・・パクチー
1 lime cut into wedges
3 cm cucumber sliced
1/2 tomato sliced

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat oil over medium heat in a large pan. Add prawns and stir-fry until cooked and set aside.
2. Put rice in a bowl, add chicken broth mix, sugar, nam pla and black pepper and mix together.
3. Heat oil over medium heat in the large pan, add garlic, red chili pepper, onion and carrot and stir-fry until cooked.
4. Add rice mix and stir-fry thoroughly.
5. Move the rice mix around the pan and pour the egg in the center of the pan.
6. After the egg is almost done, mix all ingredients together.
7. Top with prawns...

【筆者感想】
炒り卵を先に作っておいてライス等を入れる方法もあるようですが、ライスミックスを作っておいて真ん中に穴を開けてそこに溶き卵を流し込み一気に炒り卵にして全体を混ぜ合わせると奇麗なチャーハンになります・・・火はやや強めで一気に作り上げと上手くいきます。

Kusatsu Hot Springs (草津温泉紀行)

  I was in Kusatsu hot springs, Gunma to get enough rest in the New Year's holidays in Japan.

An ekiben (box lunch) ... Jambalaya on a super express bound for Kusatsu.


And lightly sparkling wine and cheese...


Snow was falling at Kusatsu town, Gumma.




A special dish for dinner... beef steak.


Toshikoshi soba... a traditional noodle dish eaten on New Years Eve in Japan.


A special dish prepared for the New Year... 正月のおせち


雑煮


I was on the return by a local train to Odawara via Takasaki at the very beginning of the new year.


Lunch at a tachigui soba stand on the second floor in Takasaki station...
