Sweet and Sour Pork (咕嚕肉、酢豚)

My homemade dish called "Sweet and Sour Pork".


Recipe : 3 servings
250 grams pork loin cut into cubes
1 tsp. garlic finely grated
1 tsp. ginger finely grated
1/4 onion finely grated
1 tbs. soy sauce
1 tbs. sake
1 tsp. sesame oil
1 tsp. cornstarch

1/2 carrot cut into chunks
1/2 onion cut into wedges
2 green pepper and/or red bell pepper cut into strips
100 grams pineapple cut into cubes

***sauce***
3 tbs. vinegar
3 tbs. soy sauce and/or oyster sauce
3 tbs. sugar
2 tbs. ketchup
2 tbs. sake
1 tbs. sweet sake (mirin)
4 tbs. water
1 tbs. cornstarch

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Mix pork with marinade. Marinade about 30 minutes.
2. Heat oil in a large pan over high heat. Add carrot, onion and pepper. Stir for 2 minutes.
3. Pour enough oil in a small pan and cook marinated pork until golden.
4. Add pork and sauce into the large pan and simmer until it thickens.
5. Add pineapple and toss to coat.

【筆者感想】
フライパンを二つ使う。マリネした豚は少なくとも10分以上置いておく(一晩置くようなことが書いてあるレシピもあるので長い方が良いのでしょう・・・)。マリネした残り汁もソースと一緒に混ぜて使う。本来豚は油で揚げるのですが、簡便法の揚げ焼きでやってみましたが問題なく出来ます。とろみが充分出るまで根気よく中火で混ぜ続ける・・・好みにもよりますが・・・

Pelmeni (ペルメニ)

  My homemade dish called "Pelmeni".


Recipe : 3 servings (15 pelmeni)
150 grams chicken thigh minced
1 onion finely chopped
1/2 tbs. olive oil
1/2 tsp. salt
2 cloves garlic finely chopped

***toppings***
green pepper
bell pepper
sour cream
melted butter

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Mix together chicken, onion, garlic and salt.
2. Place doughs on a board and place 1 tsp. filling in the center.
3. Close the edges and pinch together.
4. Pinch the corners together to form.
5. Bring a pot of water to boil. Add pelmeni and continue to a boil.
6. They should float to the top and then boil for 10 minutes.
7. Drain pelmeni and place them in a clean bowl.

【筆者感想】
ちょっとした軽食には一人5個ぐらいが適量だけれど、1回で30個ぐらいは作れる。この場合は鶏挽肉は250gぐらいが適量。余ったら冷凍保存しておくと良い。茹で方だけれど大き目のフライパンにペルメニが半分強浸かるぐらいに沸騰した湯を入れる。お湯が多すぎるとペルメニが揺らいで型崩れするので注意。本場のは鶏ではなくターキーか豚のようです。ペルメニは餃子の形ではなく焼売の形に仕上げる・・・一度餃子の形に成型して両端を摘まんで円形に仕上げる。

Chigasaki Aloha Market (茅ヶ崎アロハマーケット)

I went to Chigasaki to enjoy its food and culture at Chigasaki Aloha Market yesterday.



It was extremely crowded...



And I went to have lunch on arriving the Aloha Market...
A Kitchen Kanaloa's catering service car for lunch... しらすとローストビーフで有名な「キッチンカナロア」の移動販売車


Hawaiian Taco Rice...


And lemonade...


This is Chigasaki... Aloha shirts, short pants and flip flops!!!!!


(注)flip flops とはビーチサンダルのことですよ。ハワイ・ノースショアで人気のアーティストChristie Shinnのアートギャラリーにて・・・

I had a good time to enjoy Chigasaki, though it was crowded and a short period...

Pierogi (ピエロギ)

 My homemade dish called "Pierogi".


Recipe : 3 servings
300 grams potatoes peeled
100 grams cheddar cheese shredded
1/2 tsp. salt

***sauce***
1/4 onion finely chopped
1 clove garlic finely chopped
1 tbs. olive oil

***garnish***
parsley
tomato
bacon
sour cream

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Place potatoes in a pot, add enough water to cover potatoes then bring to a boil over medium heat and continue cooking for 15 minutes 
2. Drain and then mash potatoes, mash in salt and melted shredded cheese. Cover and set aside.
3. Place doughs on a board and add 1/2 tbs. of potato mix over each dough.
4. To form pierogi, pull the 2 edges together and pinch tightly to seal.
5. Heat oil in the pan over medium heat. Add pierogi and cook through.

【筆者感想】
生地は自作ではなく「餃子の皮大判サイズ」というのを使いました。多くのレシピには茹でるように書いてありますが難しいです。冷凍餃子を焼く要領でフライパンに少量の油を入れて焼くときれいに出来上がります。本場のピエロギは多分日本の餃子の様にパリパリに焼いたものではなく水餃子に近いのではと思います。でも焼いた方が日本人好みの食感に仕上がりますよ(笑)。

Spicy Chicken Stir Fry (鶏肉スパイス炒め)

My homemade dish called "Spicy Chicken Stir Fry".


Recipe : 3 servings
300 grams chicken breast cut into short thin strips
2 shiitake mushrooms thinly sliced
2 cloves garlic finely chopped
1+ tsp. ginger minced
suitable amount of red chili pepper finely chopped
1/2 onion cut into wedges
10 green beans cut into 4 cm lengths・・・いんげん
1 red bell pepper cut into thin strips
1 tbs. vegetable oil
2 tbs. oyster sauce
2 tbs. fish sauce
1 tsp. sugar or honey

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Heat oil in a pan over medium heat. Add the garlic, ginger and chili and stir-fry until aromatic.
2. Add the chicken strips and stir-fry until lightly browned and just cooked through. Set aside.
3. Heat the remaining oil in the pan over high heat. Add the onion, beans, bell peppers and mushrooms and stir-fry until the vegetables are tender crisp.
4. Combine the oyster sauce, fish sauce and sugar and add to the pan with the chicken and stir-fry until heated through.

【筆者感想】
鶏肉は一口大薄切りにする・・・あまり気にすることは無いけど・・・。油は全て使い切る(エキスを逃がさないように)。ソースの水分がほぼ無くなるまで炒める(水分が無くなると焦げ付くので注意)。このレシピが基本形で中国の地域ごとにいろいろなバージョンがある。湖南省のものを "Hunan Chicken" 四川省のものを "Szechuan Chicken" と言って有名だけど、たくさんの香辛料が入って激辛のようです(笑)。
