My homemade dish called "Prawn Chili Fry with Eggplant".
Recipe : 3 servings
200 grams shelled prawns・・・むき海老。下処理済みの冷凍品がお薦め
+1 tbs. sake
+pinch salt
+1 tbs. potato starch・・・片栗粉、コーンスターチでも可
3 eggplants cut into large chunks・・・乱切り
2 green peppers cut into strips
1 tbs. ground ginger
1 tbs. ground garlic
30 grams rice noodles・・・ビーフン
1 tbs. doubanjiang (Chinese chili bean sauce)・・・豆板醬
suitable amount of vegetable oil
***sauce***
6 tbs. ketchup (tomato sauce)
1.5 tbs. sake
1 tbs. sugar
1.5 tsp. soy sauce
100 ml water
1.5 tsp. potato starch
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat oil in a pan over medium-low heat. Add rice noodles and stir fry until colored. And set aside.
2. Add eggplants and stir fry until soften. And set aside.
3. Add prawns and stir fry until colored. And set aside.
4. Add green pepper, ginger and garlic and stir fry until fragrant. And add doubanjiang and sauce and stir fry until thicken.
5. Add prawns and eggplants and mix all ingredients well.
6. Arrange the mixture on a plate and dish up the rice noodles.

【筆者感想】
中華の定番料理の海老チリにナスと焼きビーフンを加えた面白い食感の料理です。油の使い方が決め手なんだけど、最初フライパン全面にちょっと多めに油を入れます。ナスがかなり油を吸うので途中で無くなるかもしれませんが、継ぎ足しながら炒め続けます(最初にかなりの量の油を入れるようなことが書かれているレシピもありますが、余ると処分に困りますから・・・)。
