Yangnyeom Chicken (ヤンニョムチキン)

  My homemade dish called "Yangnyeom Chicken".


Recipe : 3 servings
350 grams chicken thigh・・・鶏もも肉
1 tbs. sweet sake
pinch pepper
1 tsp. grated ginger
3 tbs. potato starch・・・片栗粉
3 tbs. vegetable oil

*** seasoning ***
2 tbs. gochujang or (1 tbs. tianmianjiang + 2 tsp. doubanjiang)
1.5 tbs. ketchup (tomato sauce)
1 tbs. soy sauce
1 tbs. sweet sake
1 tsp. sugar
1 tsp. grated garlic

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Cut chicken thigh into bite-size pieces. Bring a bowl to season the chicken thigh with sweet sake, pepper and ginger for 10 min.
2. Drain off excess water and mix them with potato starch.
3. Make the seasoning. In a bowl stir to combine the seasoning thoroughly.
4. Heat oil in a frying pan and cook the chicken thigh over medium heat. Drain off excess oil.
5. Add the seasoning and combine well.

【筆者感想】
韓国版フライドチキンで米国はニューヨークでも人気の食べ物(ファストフード)らしい。コチュジャンをたっぷり効かせた甘辛いフライドチキンなんだけど、甜麵醬と豆板醬でもほぼ同じ味のものが出来ると書いてあった。ランチでも酒のアテでもどんどんイケちゃいます。リッチでビターな赤ワインにバッチシ合います。
