Yangzhou Fried Rice (揚州炒飯)

  My homemade dish called "yangzhou Fried Rice".


Recipe : 3 servings
100 grams cooked Chinese pork (char siu) cut in dice
60 grams boiled shrimp
3 fresh shiitake mushroom cut in dice
1 cup frozen mixed vegetables
2 tbs. ketchup
1 tbs. sriracha chili sauce or red chili pepper
3 eggs beaten
1 tbs. ginger grated
1 tbs. soy sauce
1 tsp. sesame oil
3 cups cooked rice
2 tbs. vegetable oil
suitable amount of green onion sliced
pinch salt and pepper

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat 1 tbs. oil in a large pan over high heat. Add the eggs and scramble, then set aside.
2. Add 1 tbs. oil to the pan. Add the ginger and stir-fry. Add the mixed vegetables, the pork, the shrimp and mushrooms and cook. 
3. Then add cooked rice and toss together. 
4. Add the cooked egg back into the pan. 
5. Season the mixture with the soy sauce, salt and pepper. 
6. At the very end add the sesame oil and spicy ketchup sauce. 
7. Garnish with green onions and serve immediately.

【筆者感想】
高温でパリッと仕上げるのがコツかと・・・焦げる直前まで短時間で要領よくやる。現地のものはピリ辛らしいが、日本人向けにはチリソースは要らないかも?
