Miso Pork and Eggplant Stir-Fry (豚肉と茄子の味噌炒め)

  My homemade dish called "Miso Pork and Eggplant Stir-Fry".


Recipe : 3 servings
3 eggplants cut into large chunks・・・乱切り
150 grams thinly sliced pork・・・豚ロース薄切り
1 green onion sliced
1 clove garlic finely chopped
1 knob ginger chopped…小さな塊の刻み
1 tbs. oil for frying

#stir-frying sauce
2 tbs. miso
2 tsp. sugar
1 tbs. mirin
1 tbs. sake
1 tbs. soy sauce
3 tbs. water

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Soak the eggplants in salted water for 15 min. and drain completely.
2. In a small bowl, mix all of the frying sauce together.
3. Add the oil to a frying pan over medium heat. Cook the garlic and ginger until fragrant.
4. Add pork and stir-fry until the pork is almost cooked. Then add the eggplant and green onion and stir-fry until they become tender.
5. Add the sauce and lower the heat and simmer over low heat.

【筆者感想】
生姜とニンニクは刻みで良いのですが余裕があれば卸した方が良いのかも?。なお、味噌少なめ生姜多めの方が味が引き締まって美味いです。
