My homemade dish called "Mapo Eggplant Rice Bowl".
Recipe : 3 servings
90 grams miso seasoning for mapo eggplant(*)・・・麻婆茄子のタレ
2-3 eggplants cut into 8 pieces
1/2 carrot cut into rectangles
1/2 cucumber or 2 green peppers cut into rectangles
4-5 tbs. vegetable oil
*=soy sauce, sugar, miso, mirin, garlic, ginger and doubanjiang
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat oil in a large pan over medium heat. Add eggplants and stir-fry until they start to be tender.
2. Add carrot and cucumber and stir-fry until cooked through.
3. Add miso mixture (seasoning) to the pan and stir-fry until well blended.
4. Put the mapo eggplant over the cooked rice.

【筆者感想】
タレは自作出来ますが、市販品を使った方が楽・・・好みによってニンニクと生姜を加えます。茄子が油を吸うので油は多めに入れる。キュウリかピーマンは彩を添える為で小口ネギがあれば最後に振りかけるというのもあり。タレを入れたら水分がある程度蒸発する迄炒め続ける。
