Mapo Eggplant (麻婆茄子)

  My homemade dish called "Mapo Eggplant".


Recipe : 3 servings
100 grams minced pork
90 grams miso seasoning for mapo eggplant(*)・・・麻婆茄子のタレ
5 eggplants cut into 8 pieces
1/4 carrot cut into rectangles
2 green peppers cut into rectangles
1/2 onion sliced
1 tbs. sake
3 tbs. vegetable oil
1 tbs. potato starch (+ 1 tbs. water)
1-2 tsp. doubanjiang to taste
1-2 tsp. tianmianjiang to taste

*=soy sauce, sugar, miso, mirin, garlic, ginger, doubanjiang and tianmianjiang

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Heat oil in a large pan over medium heat. Add eggplants and stir-fry until they start to be tender.
2. Add carrot, onion and green peppers and stir-fry until cooked through and set aside.
3. Stir-fry pork with sake in the pan. Add miso mixture (seasoning) to the pan and stir-fry until well blended.
4. Add vegetables and potato starch and mix well.

【筆者感想】
タレは自作出来ますが、市販品を使った方が楽・・・好みによって豆板醬と甜麵醬を加えます。丼でなく単品のおかずのときは型崩れしにくいように片栗粉を使います。
