Chicken and Basil Stir-Fry (鶏胸肉のバジル炒め)

  My homemade dish called "Chicken and Basil Stir-Fry".


Recipe : 3 servings
300 grams chicken breast・・・鶏胸肉1枚
1 tbs. potato starch・・・片栗粉(コーンスターチでも可)
1 onion sliced
1 tomato coarsely chopped
3 bell peppers sliced・・・赤、緑、黄のピーマン
10 grams basil leaves
1 clove garlic minced
pinch chili pepper finely chopped・・・赤唐辛子を適量(少量で可)
pinch salt・・・ハーブソルトがお薦め
pinch pepper
1 tbs. vegetable oil
1 tbs. soy sauce

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. In a medium bowl, toss chicken with cornstarch until coated and season generously with salt and pepper.
2. In a large pan, heat oil over medium heat. Cook onion, garlic, chili pepper until fragrant. And then cook the chicken until browned, but not cooked completely.
3. Add bell peppers, tomato and stir-fry over medium heat. 
4. Add soy sauce and cooked until chicken is cooked through.
5. Remove from heat and stir in basil leaves.

【筆者感想】
鶏胸肉はまな板に広げ、縦横に細かく包丁を入れ(叩く)適当な長さにスライスし片栗粉をまぶしておく。バジルは大きな葉を飾り用に残しておき、他は微塵切りにして料理に混ぜる。醤油の量はお好みで・・・大さじ1~2杯。トマトで酸味を強くしておくと白ワインとよく合います。
