My homemade dish called "Yuxian Qiezi".
Recipe : 3 servings
200 grams ground pork・・・豚ひき肉3 eggplants sliced
Directions :
3 bell peppers sliced・・・ピーマン、カラーピーマンがお薦め
1 tsp. grated ginger
1 clove garlic minced
2 tbs. vegetable oil
*** seasoning ***
1 tbs. soy sauce
1 tbs. sake
2 tbs. sweet sake
1 tbs. tianmianjiang・・・甜麵醬
1 tsp. doubanjiang・・・豆板醬
1 tsp. sugar
1 tsp. potato starch・・・片栗粉
2 tsp. chicken broth mix・・・鶏ガラスープの素
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Make the seasoning. In a bowl stir to combine the seasoning thoroughly.
2. Bring a medium pot of salted water to take out the eggplant's bitterness and then drain.

3. Heat oil in a frying pan and cook the eggplants over medium heat. Set them aside.
4. Add ginger, garlic and peppers in a frying pan and stir-fry.
5. Add ground pork and stir-fry until well cooked. Drain excess oil
6. Add the eggplants and the seasoning and combine well.
【筆者感想】
四川料理(Sichuan cuisine)なんだけど、日本の麻婆茄子(Mapo eggplant)に似ている・・・というか麻婆茄子を作ろうとしたらこれになってしまった。なお、豚肉から出る余分な油は捨てる。ポイントは甜麵醬と豆板醬を効かせてピリ辛に仕上げるところかな・・・
