My homemade dish called "Youlinji".
Recipe : 2-3 servings
300 grams chicken thigh・・・鶏もも肉1枚1 tbs. sake
pinch pepper
pinch salt・・・ハーブソルトがお薦め
3 tbs. potato starch・・・片栗粉
1 tsp. vegetable oil
***sauce***
1 tbs. soy sauce
1 tbs. soy sauce
1/2 tbs. sake
2 tbs. sugar
2 tbs. vinegar
1 tsp. sesame oil
green onion sliced
grated ginger
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Place the chicken into the bowl. Add sake, pepper, salt and potato starch and toss to coat with seasonings. Soak it for 10 min.

鶏もも肉はまな板に広げ、縦横に細かく包丁を入れておく・・・特に厚みがあるところは丁寧に包丁を入れ押さえて全体をなるべく均一な厚さにする。先に準備よく調味料を合わせて煮立てておく。本来は油で揚げるのですが、フライパンでソテーする要領で両面に軽く焦げ目がつくくらいに焼く。片栗粉が薄くコーティングされていると形崩れしにくいのだと思う。
