My homemade dish called "Fried Bitter Gourd with Egg".
Recipe : 3 servings
1 bitter gourd (goya in Japanese) half-moon sliced
1 onion roughly chopped
2 fish sausages diagonally sliced
3 eggs
pinch salt
pinch pepper
1 tbs. vegetable oil
***broth***
1/2 cup water
1 tbs. sake
6 grams chicken broth mix・・・鶏ガラスープの素
1 tsp. soy sauce
pinch black pepper
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Cut goya in half-moon thin slices (3-4 mm width). Sprinkle salt on goya and massage it to soften and remove unpleasant flavors.
2. Heat vegetable oil in a frying pan. Stir in the sausages and the onion. Cook and stir until the onion has turned translucent.
3. Pour the broth mix into the pan and stir to combine.
4. Add the goya in the pan and stir to combine.
5. Simmer until the goya mixture have almost cooked off.
6. Pour the beaten eggs into the goya mixture. Cook until they are firm but not dry.
【筆者感想】
ゴーヤは種とワタを取り除き塩もみして水洗いし苦み成分を取っておきます(全部は取れない、苦みが残っている方が料理が引き立つ)。溶き卵に少し塩コショウする程度で余分な塩は不要・・・ハーブソルトを使いましたが、鶏がらスープの素だけで充分美味しく出来上がります。溶き卵を入れる前に水分を殆ど蒸発させておくと上手くできる。これ簡単なので、ゴーヤチャンプルーはちょっとという向きには非常に良いと思う。
