Piperade (ピペラード)

   My homemade dish called "Piperade".


Recipe : 3 servings
2 green peppers thinly sliced
1 yellow bell pepper and/or red bell pepper thinly sliced
1/2 onion roughly chopped
3 tomatoes chopped
1 clove garlic minced
1 chili red pepper finely minced
3 eggs
pinch salt
8 grams butter
3 prosciuttos・・・生ハム
1 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Dice tomatoes in 1 cm cubes. Cut peppers thinly sliced and onion roughly chopped.
2. Heat olive oil in a frying pan. Stir in the garlic and the onion. Cook and stir until the onion has turned translucent.
3. Add the peppers in the pan and stir to combine.
4. Add the tomatoes in the pan and stir to combine.
5. Simmer until the tomato mixture have almost cooked off.
6. Make scrambled eggs with beaten eggs.
7. Put scrambled eggs on the plate and add the tomato mixture on the eggs and finally put the prosciutto on the tomato mixture.

【筆者感想】
トマトが多めの方が美味しくできます。もし足りなければケチャップを足します・・・写真のものはケチャップを足しました。塩で味付けするように書かれていますが、バターだけでも十分美味いです。酸味と旨味のある具材にちょっと塩気のある生ハムのコンビネーションが料理を引き立てますね。ランチでもワインのアテでも軽めの食べ物として抜群!。
