My homemade dish called "Spicy Chicken Stir Fry".
Recipe : 3 servings
300 grams chicken breast cut into short thin strips
2 shiitake mushrooms thinly sliced
2 cloves garlic finely chopped
1+ tsp. ginger minced
suitable amount of red chili pepper finely chopped
1/2 onion cut into wedges
10 green beans cut into 4 cm lengths・・・いんげん
1 red bell pepper cut into thin strips
1 tbs. vegetable oil
2 tbs. oyster sauce
2 tbs. fish sauce
1 tsp. sugar or honey
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat oil in a pan over medium heat. Add the garlic, ginger and chili and stir-fry until aromatic.
2. Add the chicken strips and stir-fry until lightly browned and just cooked through. Set aside.
3. Heat the remaining oil in the pan over high heat. Add the onion, beans, bell peppers and mushrooms and stir-fry until the vegetables are tender crisp.
4. Combine the oyster sauce, fish sauce and sugar and add to the pan with the chicken and stir-fry until heated through.

【筆者感想】
鶏肉は一口大薄切りにする・・・あまり気にすることは無いけど・・・。油は全て使い切る(エキスを逃がさないように)。ソースの水分がほぼ無くなるまで炒める(水分が無くなると焦げ付くので注意)。このレシピが基本形で中国の地域ごとにいろいろなバージョンがある。湖南省のものを "Hunan Chicken" 四川省のものを "Szechuan Chicken" と言って有名だけど、たくさんの香辛料が入って激辛のようです(笑)。
