My homemade dish called "Red Beans and Rice".
Recipe : 3 servings
200 grams red beans・・・茹で小豆無糖の缶詰
1/2 onion chopped
200 grams pork sausage・・・fish sausageでもなんとかいけます
2 green peppers…赤や黄のパプリカでもいけます
1 rib celery chopped
1 clove garlic finely chopped
1 tbs. ketchup (tomato sauce)
10 grams spice seasonings・・・ケージャン、ジャンバラヤ等
3 grams chicken stock (consomme) + 200ml water
suitable amount parsley
1 tbs. vegetable oil
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat vegetable oil in a frying pan... add sausage and stir-fry till it comes to color
2. Add onion, green pepper, celery and stir-fry till they come to soften
3. Add ketchup, garlic and seasonings and stir-fry
4. Add chicken stock and red beans and simmer for 10min.
4. Finally add cooked rice and parsley
【筆者感想】
米国南部ルイジアナあたりに赤飯があるというので作ってみた(笑)・・・似ても似つかぬものが出来上がった! 濃厚で美味い・・・濃厚な赤ワインと一緒に食べるとグッド!
