My homemade dish called "Khao Pad Goong".
Recipe : 3 servings
3 cups cooked rice・・・茶碗軽く3杯
15 boiled prawns・・・ボイルむき海老
1 onion diced
6 cm carrot diced
1 clove garlic minced
suitable amount of green onions・・・小口ねぎ
3 eggs beaten
1.5 tbs. nam pla (fish sauce)
1 tsp. sugar
3 grams chicken broth mix・・・顆粒チキンスープの素
pinch salt and black pepper
suitable amount of chili red pepper
3 tbs. vegetable oil・・・1杯は海老を炒める、2杯はライスを炒める
suitable amount of coriander (cilantro)・・・パクチー
1 lime cut into wedges
3 cm cucumber sliced
1/2 tomato sliced
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat oil over medium heat in a large pan. Add prawns and stir-fry until cooked and set aside.
2. Put rice in a bowl, add chicken broth mix, sugar, nam pla and black pepper and mix together.
3. Heat oil over medium heat in the large pan, add garlic, red chili pepper, onion and carrot and stir-fry until cooked.
4. Add rice mix and stir-fry thoroughly.
5. Move the rice mix around the pan and pour the egg in the center of the pan.
6. After the egg is almost done, mix all ingredients together.

【筆者感想】
炒り卵を先に作っておいてライス等を入れる方法もあるようですが、ライスミックスを作っておいて真ん中に穴を開けてそこに溶き卵を流し込み一気に炒り卵にして全体を混ぜ合わせると奇麗なチャーハンになります・・・火はやや強めで一気に作り上げと上手くいきます。
