Recipe : 3-4 servings
360ml Japanese rice
1 tomato coarsely chopped
1/2 onion chopped
1/2 lemon sliced
200grams asari clams
2 garlic cloves finely chopped
bunch basil
180ml 100% tomato juice with no sodium
6grams seafood soup stock + 180ml water
1 tbls olive oil
Directions :
- 1. Heat 1tbls olive oil in a large frying pan... Add chopped garlic and soften.
2. Stir in 360ml Japanese rice and chopped onion... Stir for several minutes.
3. Stir in tomato juice and soup stock.
4. Once it comes to a boil, add tomatoes and asari clams.
5. Cover with a lid. Simmer for 15mins.
