Goya Chanpuru (ゴーヤチャンプルー)

My homemade dish called "Goya Chanpuru".
(注)ゴーヤチャンプルーに相当する英語は無く、ローマ字表記でごまかすしかないのですが沖縄の基地では知っている人がいるので、その内米国中に広がるでしょう?。

Recipe : 3 serving
1 bitter melon (also known as goya)
300 g tofu
150 g thinly sliced pork belly
2 eggs
1 tbs. olive oil
1 tbs. soy sauce
pinch black pepper
If you like... add
dried bonito flakes
and/or tomato
and/or parsley

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan... Add pork belly and goya and stir-fry.
2. Once they come to color and soften, add tofu and stir-fry.
3. Simmer off all.
4. Add soy sauce and black pepper and stir-fry.
5. Finally add egg and stir-fry. 
6. Dish up parsley and tomato and sprinkle dried bonito flakes on a dish.
(注)ゴーヤは半月状に薄切りし塩もみして5分置き水でよく洗っておく
