Sauteed Cabbage (キャベツのガリバタ炒め)

 My homemade dish called "Sauteed Cabbage".


Recipe : 3 servings
400 grams cabbage shredded coarsely
3-6 sausages (wiener, frankfurter or fish) cut diagonally 斜め切り
1 garlic clove finely chopped
10-15 grams butter
pinch salt
pinch black pepper
1 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan... add sausages, cabbage, garlic and stir-fry till they come to soften.
2. Almost cooked, add butter, salt, pepper and stir-fry.

(注)
これ、Stir-fried Cabbage と言うのが正しいように思うのですが、ネットで海外の投稿を見ると殆どが Sauteed Cabbage と書いてます・・・こう言うのが通例なんでしょう? なお、with garlic and butter としたいところですが誰もそのように書いてませんね・・・キャベツ炒めというのは普通ガリバタ炒めのことなんですね。

Frittata (フリッタータ)

 My homemade dish called "Frittata".


Recipe : 3 servings
6 eggs
60 grams mushroom・・・しめじ、椎茸等
1/2 onion sliced
1 potato sliced
1/2 tomato diced 1cm
1 tbs. cheese
1/2 tsp. salt or 3grams chicken stock (consomme)
pinch black pepper
3 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat 1 tbs. olive oil in a frying pan... add onion, potato, mushroom and stir-fry till they come to soften.
2. Beat eggs in a bowl and add ingredients, pepper, salt.
3. Heat 2 tbs. olive oil in a frying pan and pour the egg mixture into the pan.

(note)
A ratio of ingredients to make a great frittata...
6 eggs
1/4 cup heavy cream
1 cup cheese
2 cups vegetable
これが本場イタリアでの黄金比率らしいです・・・クリーミーに仕上げるのがポイントなのだそうですが、私はクリーム類は入れなかったけど美味かった(本場の味を知らないだけですけど・・・笑)。卵を多めにしないとばらけますし、油多めでないと焦げ付きますね(コーティング加工したフライパンを使えと大概書いてある)・・・何回失敗した事か!
クリームはミルク、サワークリーム、ヨーグルトなんかもOKなようなことが書いてありますが、試していません。

A special gathering called "bonenkai" (忘年会その1)

 I had a special gathering called "Bonenkai" at a listening room of my ex-colleague in Machida, Tokyo yesterday.


We had a good time to enjoy jazz, country and bluegrass music... especially old-time music !
And on the way back home, I stopped at a wine bar in Machida...


Marinated mackerel and Bechar Fiano di Avellino, a great medium body wine... nice and complex !

Porpette (ポルペッティ)

 I had lunch at a restaurant serves wine and grills in Machida today.
松本平ブラッククイーン/Blackqueen from Nagano, Japan.
(注)濃紫色の深い色合い、凝縮された果実味と適度な渋みが特徴


Porpette... yummy!
(注)ミートボールのトマト煮込み。小さいのをPorpettini という。


The dry medium body red wine goes well with the pork propetti in a tasty tomato sauce... yummy !

Stuffed Peppers (肉詰めピーマン)

  My homemade dish called "Stuffed Peppers".


Recipe : 3 servings
3 large bell pepper・・・日本ではパプリカとして売られている
200 grams minced beef and pork
1/2 onion chopped
1 garlic clove finely chopped
1 cup cooked rice
400 grams can chopped tomatoes・・・カットトマト缶
1 tsp. salt
pinch black pepper
10 grams spice mix・・・タコス、ジャンバラヤ、ケイジャン料理用のスパイス
suitable amount cheese and parsley
1 tbs. olive oil
3 tbs. ketchup (tomato sauce) if you like

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Remove top of pepper and remove seeds... rinse peppers.
2. Heat enough water to boiling... add peppers and cook about 2 min.
3. In large frying pan, stir-fry garlic and onion... add minced meat, stirring occasionally until meat is brown.
4. Add spice mix and tomatoes and cook until hot.
5. Stuff peppers with meat mixture.
6. Bake 10 min. in an oven or until cheese and pepper are tender.

(注)6番は主にチーズをとろけさせるためなので、別の方法でチーズをとろけさせればなくても良い(2番をやっておかないとベーキングが必要で時間がかかる)。
調理済みのライスを入れてから肉を入れる。

Borsht... yummy!


Light body but smooth wine... good for sour-tasting soup... yummy !

Yachaejeon, Korean Vegetable Pancake (ヤチェジョン 野菜チヂミ)

 My homemade dish called "Yachaejeon".




Recipe : 3 servings
4 green onions cut into 1 inch long
1/2 leek thinly sliced
1/2 zucchini cut matchsticks
1 green pepper sliced
1/2 onion sliced
1/2 carrot sliced
1 shiitake mushroom
3/4 cup flour
1/2 tsp. salt
3/4 cup water
2 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

No direction for cooking...
Use a large pan to make one big pancake.



Turn or flip over the pancake several times.

Scotch Eggs (スコッチエッグ)

  My homemade dish called "Scotch eggs".


Recipe : 3 servings
3 eggs
150 grams minced beef and pork
1 onion chopped
1 beaten egg・・・溶き卵
1.5 tbs. bread crumbs・・・panko (パン粉)
1/4 tsp. salt
pinch black pepper
3 tbs. flour
45 grams bread crumbs・・・panko (パン粉)
3 tbs. olive oil
3 tbs. Worcestershire sauce・・・ウスターソース
3 tbs. ketchup (tomato sauce) 
3 tbs. sake

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Make hard-cooked eggs in 800 ml boiling water + 1 tsp. salt in 7 min.
2. In large bowl, mix minced meat, onion, beaten egg, bread crumbs, salt and black pepper. Shape mixture into 3 patties.
3. Roll each hard cooked egg in flour to coat and place on patty and shape patty around egg.
4. Coat with bread crumbs to cover completely.
5. Heat olive oil in a frying pan, and bake them in 10 min. or until they are thoroughly cooked.

 I had lunch at an American style sushi restaurant near Odakyu-Sagamihara station in Sagamihara yesterday. It is located along Kanagawa Prefecture Route 51.

Fresh Whitebait Bowl (生しらす丼)

 I had lunch at a seaside seafood restaurant "Fujimitei 富士見亭" serves fresh seafood with a superb view in Enoshima yesterday.



This is my lunch "fresh whitebait bowl(生しらす丼)"... baby anchovies topped on rice, miso soup and Japanese pickles... yummy!!

3-4 eggs
1/4 cabbage shredded
1/2 green onion sliced
1 green pepper sliced
1 tbs. flour
1 tsp. soy sauce or pinch salt
pinch black pepper
1.5 tbs olive oil・・・焦げ付かない様にやや多めが良い

This orange colored Koshu wine is soft, fruity and aromatic... a good match for vegetable dishes... yummy !!
