Cold Pasta with Peach Sauce (桃の冷製パスタ)

  I had lunch at a restaurant under COVID-19 state of emergency in Machida.


Cold Pasta with Peach Sauce and guava juice... 


I was staying away from drinking... lunch without wine... drinking at restaurants is strictly prohibited...

Shakshouka (シャクシュカ)

   My homemade dish called "Shakshouka".


Recipe : 3 servings
2 tbs. olive oil
1 onion chopped
1 carrot chopped
2 cloves garlic minced
2 bell pepper thinly sliced, any color
1 tomato chopped
400 grams diced tomatoes・・・カットトマト缶
3 eggs
1 tbs. seasoning
(ground cumin + paprika + hot chili pepper)・・・ジャンバラヤのシーズニングで代用
suitable amount parsley minced

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan over medium heat. Stir in the carrot, the onion, the bell peppers and garlic. Cook and stir until the vegetables have soften and the onion has turned translucent.
2. Pour the tomato mixture into the pan and stir to combine.
3. Add the seasoning evenly in the pan and stir to combine.
4. Simmer until the tomato juice have cooked off.
5. Crack the eggs into the tomato mixture. Cover the pan and let the eggs cook until they are firm but not dry.

【筆者感想】
ジャンバラヤのシーズニングだけで他の調味料(塩、コショウ等)は一切不要。カットトマト缶とトマトで量を調整する(3人分だとカットトマト缶400gでは少ない)とうまくいく。ニンジンは細かく切ってまず最初に炒める事(ニンジンが入ってないレシピの方が多いですが・・・)。トマトのコクと酸味が辛口白ワインかロゼワインとよく合います。なお、どのレシピにもトマトミクスチャーに穴を掘ってそこに卵を流し込むようなことが書かれていますが、これは難しく見栄えが良くない・・・なので、別のフライパンで半熟状の卵焼きを作っておいてトマトミクスチャーに載せるようにしました・・・一人分ずつ皿に盛る時にはこれの方がうまくいきます。

Bacon Wrapped Pork Tenderloin (豚ヒレのベーコン巻き)

Fish Sausage Fried Rice (お魚ソーセージのチャーハン)

  My homemade dish called "Fish Sausage Fried Rice".


Recipe : 3 servings
2 cups cooked rice・・・軽く茶碗2杯
2 fish sausage sliced in half moon
2 tsp. soy sauce
pinch pepper
2 tbs. mayonnaise
50 grams mixed vegetables・・・冷凍のミックスベジタブル
3 grams chicken broth mix・・・鶏ガラスープの素

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat the mayonnaise in a frying pan until almost melting. Add rice and stir-fry over medium heat until piping hot.
2. Add the fish sausage and mixed vegetables and make the rice mixture.
3. Cook over high heat and stir in the soy sauce and the seasoning. Serve immediately.

【筆者感想】
卵無し、オイル無しのパラパラ自家製独自チャーハン・・・お魚ソーセージで独自性高めてます(笑)。醤油は減らして鶏ガラスープの素で味付けしています。ご飯は雑穀米を使いましたがもちろん白いご飯でOK。

Yangnyeom Chicken (ヤンニョムチキン)

  My homemade dish called "Yangnyeom Chicken".


Recipe : 3 servings
350 grams chicken thigh・・・鶏もも肉
1 tbs. sweet sake
pinch pepper
1 tsp. grated ginger
3 tbs. potato starch・・・片栗粉
3 tbs. vegetable oil

*** seasoning ***
2 tbs. gochujang or (1 tbs. tianmianjiang + 2 tsp. doubanjiang)
1.5 tbs. ketchup (tomato sauce)
1 tbs. soy sauce
1 tbs. sweet sake
1 tsp. sugar
1 tsp. grated garlic

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Cut chicken thigh into bite-size pieces. Bring a bowl to season the chicken thigh with sweet sake, pepper and ginger for 10 min.
2. Drain off excess water and mix them with potato starch.
3. Make the seasoning. In a bowl stir to combine the seasoning thoroughly.
4. Heat oil in a frying pan and cook the chicken thigh over medium heat. Drain off excess oil.
5. Add the seasoning and combine well.

【筆者感想】
韓国版フライドチキンで米国はニューヨークでも人気の食べ物(ファストフード)らしい。コチュジャンをたっぷり効かせた甘辛いフライドチキンなんだけど、甜麵醬と豆板醬でもほぼ同じ味のものが出来ると書いてあった。ランチでも酒のアテでもどんどんイケちゃいます。リッチでビターな赤ワインにバッチシ合います。
