Twice Cooked Pork (回鍋肉、ホイコーロー)

 My homemade dish called "Twice Cooked Pork".


Recipe : 3 servings
200 grams pork belly sliced・・・豚バラうす切り
1/4 cabbage cut into bite-size pieces…一口大に乱切り
3 peppers red, green and yellow sliced
1 shiitake mushroom sliced
10 cm long green onion sliced
1 tsp. grated ginger
1 tsp. doubanjiang・・・豆板醬
1 tbs. sake

***seasoning***
1 tbs. Tian Mian Jiang・・・甜麵醬
1 tsp. sugar
1 tbs. sake
1 tsp. soy sauce
1 tsp. grated garlic
1/2 tsp. potato starch

***others***
potato starch for dusting meat
1 tbs. vegetable oil for sauteing
1/2 tsp. sesame oil for finishing touch

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Prepare the ingredients, cabbage, peppers, mushroom and long green onion.
2. Make the sauce. In a bowl stir to combine Tian Mian Jiang, sugar, sake, soy sauce, grated garlic and potato starch thoroughly.
3. Line up the pork belly slices on a tray and dust with potato starch.
4. Heat vegetable oil in a pan. Cook pork belly till they are lightly browned and set aside. 
5. Add the ginger, doubanjiang in a pan and stir-fry over low heat till the aroma grow stronger. Add peppers, mushroom and green onion over medium heat till the peppers begin to soften.
6. Add cabbage and continue to stir-fry
7. When the cabbage is coated with oil evenly, pour over the sake.
8. When all the vegetables soften, add the cooked pork slices, and turn off the heat, and pour in the sauce. Turing off the heat when adding the seasonings and thicken the sauce evenly.
9. Turn on the heat again and coat the vegetables with the sauce evenly over medium heat.
10. Add the sesame oil and place it on a plate.

【筆者感想】
豚肉は片栗粉を薄くコーティングしておくと型崩れせず調味料が良く付くのだそうです。豚肉を二度調理するというのがポイントみたいですが、手間暇かけるだけあってなかなか美味いです!!
