Sweet and Sour Pork (咕嚕肉、酢豚)

My homemade dish called "Sweet and Sour Pork".


Recipe : 3 servings
250 grams pork loin cut into cubes
1 tsp. garlic finely grated
1 tsp. ginger finely grated
1/4 onion finely grated
1 tbs. soy sauce
1 tbs. sake
1 tsp. sesame oil
1 tsp. cornstarch

1/2 carrot cut into chunks
1/2 onion cut into wedges
2 green pepper and/or red bell pepper cut into strips
100 grams pineapple cut into cubes

***sauce***
3 tbs. vinegar
3 tbs. soy sauce and/or oyster sauce
3 tbs. sugar
2 tbs. ketchup
2 tbs. sake
1 tbs. sweet sake (mirin)
4 tbs. water
1 tbs. cornstarch

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
1. Mix pork with marinade. Marinade about 30 minutes.
2. Heat oil in a large pan over high heat. Add carrot, onion and pepper. Stir for 2 minutes.
3. Pour enough oil in a small pan and cook marinated pork until golden.
4. Add pork and sauce into the large pan and simmer until it thickens.
5. Add pineapple and toss to coat.

【筆者感想】
フライパンを二つ使う。マリネした豚は少なくとも10分以上置いておく(一晩置くようなことが書いてあるレシピもあるので長い方が良いのでしょう・・・)。マリネした残り汁もソースと一緒に混ぜて使う。本来豚は油で揚げるのですが、簡便法の揚げ焼きでやってみましたが問題なく出来ます。とろみが充分出るまで根気よく中火で混ぜ続ける・・・好みにもよりますが・・・
