いずれも七分咲から満開直前に撮影・・・今年は例年よりかなり早めの開花でした。

Sea Bass Poêle (鱸のポワレ)

Teriyaki Meatballs (テリヤキミートボール)

 My homemade dish called "Teriyaki Meatballs".


Recipe : 3 servings
350 grams ground beef and pork
50 grams panko bread crumbs
1 egg
1 clove garlic finely chopped
suitable amount parsley or green onion finely chopped
1/2 tbs. soy sauce
1 tsp. sake
pinch pepper
1 tbs. olive oil

teriyaki sauce
1 tsp. sesame oil
2.5 tbs. soy sauce
2 tbs. mirin (sweet sake)
2 tbs. sake
2 tbs. sugar
4 tbs. water
1/2 tbs. cornstarch (mixed with 1 tbs. water)

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Mix together all of the ingredients in a large bowl until well-combined. Spoon out meat mixture with a tablespoon, shape into balls.
2. Heat 1 tbs. olive oil in a large pan. Brown the meatballs on all sides until golden. Transfer to a plate.
3. Pour the sauce over meatballs.

【筆者感想】
普通はトマトソース味が多いのですが、今回はテリヤキソースを作ってみました。洋風なのに和風の味が楽しめます。ソースは鍋に入れて温めながらよく混ぜ合わせ、最後にコーンスターチを加えてとろみをつけます。軽めの赤ワインに合います。

 We, former colleagues of mine from the same company have been to see the cherry blossoms at Kuzuharaoka-jinja shrine in Kamakura today.

Salsa Chicken Casserole (メキシカンチキンライス)

 My homemade dish called "Salsa Chicken Casserole".


Recipe : 3 servings
200 grams chicken thigh
1/2 onion diced
1 green bell pepper diced
1 clove garlic finely chopped
8 grams butter
3 grams chicken broth + 1 cup water
suitable amount cooked rice・・・茶碗軽く2杯
1/2 cup salsa
60 grams beans
suitable amount shredded cheese
1 tsp. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a large frying pan and cook onions, garlic and peppers until tender.
2. Add butter and chicken and stir-fry until colored.
3. Add rice, water, beans and salsa. Stir well and bring to a boil.
4. Simmer, stirring well until tender. 

【筆者感想】
チキン味のコンソメを入れることで味が引き締まります。ケチャップベースの日本版チキンライスより格段に美味いです。軽めの赤ワインに合います。

Salsa Omelette (サルサオムレツ)

 My homemade dish called "Salsa Omelette".


Recipe : 3 servings
3 eggs
1 avocado
suitable amount shredded cheese
suitable amount salsa
pinch black pepper
10 grams butter
1 tomato (option)
1/2 onion (option)

No direction for cooking

【筆者感想】3人前を一気にスクランブルで作っても良いのですが1人前ずつ平たく作って折り返した方が見栄えが良いです。付け合わせの玉ねぎとトマトはみじん切りにして少し炒めておいた方が食べやすいです・・・最終的にはサルサと混ぜ合わせるのですが・・・

Tomato Stewed Sardine (鰯のトマト煮込み)

 My homemade dish called "Tomato Stewed Sardine".


Recipe : 3 servings
2 canned sardines・・・鰯の缶詰(蒲焼缶ではなく和風風味)
1/2 onion chopped
1 garlic clove finely chopped
2 tsp. olive oil
400 grams diced tomatoes
60-100 grams beans
100 grams broccoli
suitable amount shredded cheese

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan... add garlic, onion and stir-fry
2. Add tomatoes, beans and stir to combine.
3. Add sardines and broccoli
4. Bring everything to a boil then reduce to simmer.
5. Sprinkle cheese on top.

【筆者感想】
鰯缶は味噌煮、水煮等の和風のものを使うとトマトと相性が良いみたいです。煮汁を使えば調味料は不要で上手くできる。白ワインに合うと思うけど軽めの赤ワイン、梅酒でも合わせられる。

Stuffed Pepper Casserole

 My homemade dish called "Stuffed Pepper Casserole".


Recipe : 3 servings
250 grams ground beef
1/2 onion chopped
1 each bell pepper green and red diced
150 grams spinach chopped
5 grams Italian seasoning・・・ローズマリー、オレガノ、タイム等のミックス
200 grams diced tomatoes ・・・トマトピュレでも可
1 tbs. tomato sauce・・・ケチャップ
2 tsp. Worcestershire sauce
suitable amount cooked rice・・・茶碗軽く2杯
suitable amount shredded cheese
suitable amount parsley
1 garlic clove finely chopped
1 tsp. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan... add garlic, onion and beef and cook until browned
2. Add seasoning, spinach, peppers, tomatoes, Worcestershire sauce and rice and stir to combine.
3. Bring everything to a boil then reduce to simmer.
4. Sprinkle cheese and parsley on top.


【筆者感想】
調味料はローズマリーが入っていればなんでも使える。塩、コショウ、コンソメを加えるようなレシピもあるけど無くても濃厚で美味いです。リッチな赤ワインによく合います。

Beef Burritos

 My homemade dish called "Beef Burrito".


Recipe : 3 servings or 5 burritos
5 soft flour tortillas
suitable amount of cooked rice
1/4 lettuce sliced
suitable amount of corn or mixed vegetables
1 onion chopped・・・半分は炒め、残りは生野菜として使う
1 tomato diced
suitable amount of shredded cheese
1 garlic clove finely chopped
250 grams ground beef
1 tbs tomato sauce
8 grams taco seasoning・・・ジャンバラヤでもケージャンでもOKと思う
1 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a frying pan... add garlic and onion, cook till they come to color
2. Add beef and cook until it turns to brown
3. Add taco seasoning and tomato paste cook until water is mostly evaporated
4. Place everything on a tortilla

【筆者感想】
調味料は全部入りのタコシーズニングを使えばOK。ランチでも午後の軽食にでもよく合うし美味いので食が進みます。穀類、肉、野菜がバランスよく摂れるお手軽料理。スパイシーなのでリッチな赤ワインがよく合います。
