Salsa Chicken Casserole (メキシカンチキンライス)

 My homemade dish called "Salsa Chicken Casserole".


Recipe : 3 servings
200 grams chicken thigh
1/2 onion diced
1 green bell pepper diced
1 clove garlic finely chopped
8 grams butter
3 grams chicken broth + 1 cup water
suitable amount cooked rice・・・茶碗軽く2杯
1/2 cup salsa
60 grams beans
suitable amount shredded cheese
1 tsp. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Heat olive oil in a large frying pan and cook onions, garlic and peppers until tender.
2. Add butter and chicken and stir-fry until colored.
3. Add rice, water, beans and salsa. Stir well and bring to a boil.
4. Simmer, stirring well until tender. 

【筆者感想】
チキン味のコンソメを入れることで味が引き締まります。ケチャップベースの日本版チキンライスより格段に美味いです。軽めの赤ワインに合います。
