Eggplant and sausage stir-fry (茄子とソーセージの中華炒め)

  My homemade dish called "Eggplant and sausage stir-fry".


Recipe : 3 servings
3 eggplants cut into large chunks・・・乱切り
1 fish sausage cut into large chunks・・・乱切り
3 bell peppers sliced・・・カラーピーマン又はししとう
1 clove garlic minced
1 tbs. ginger minced
1 tbs. vegetable oil

# sauce
80 ml water
1 tbs. sake
1/2 tsp. oyster sauce
1 tbs. soy sauce
1/2 tsp. sugar

1 tsp. cornstarch + 2 tsp. water・・・片栗粉でも可

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Soak the eggplants in salted water for 15 min. and drain completely.
2. In a small bowl, mix all of the sauce together.
3. Add the oil to a frying pan over medium heat. Cook the garlic and ginger until fragrant.
4. Add eggplants and stir-fry until almost cooked. 
5. Add the sauce and lower the heat and simmer over low heat.
6. Then add the sausage and peppers and stir-fry until they become tender.
7. Finally add cornstarch and mix together.

【筆者感想】
味噌とかポークが入っていない茄子の中華炒め。お魚ソーセージも茄子となかなか相性が良いです。元々ししとうを使うのだったのですがカラーピーマンの方が見た目が良いです。
