Navajo Tacos, Fry Bread Tacos (ナバホタコス)

  My homemade dish called "Navajo Tacos".


Recipe : 3 servings
***Indian Fry Bread***
1.5 cups all-purpose flour
1 tbs. (8 grams) baking powder
1/2 tsp. salt
1 cup milk
suitable amount oil for frying

***Tacos***
1/2 onion diced
2 green peppers diced
350 grams ground beef
8 grams taco seasoning mix
400 grams kidney beans (option)
1 tbs. vegetable oil

***toppings***
cherry tomatoes diced
Cheddar cheese shredded
lettuce shredded
avocado sliced
salsa
sour cream
cilantro

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions : 
0. (option) Combine beans and salsa in a small pan over low heat. Cook until heated through.
1. Combine ground beef and taco seasoning mix in a large pan over medium-high heat. Cook until browned. Cover and keep warm while you prepare the fry bread.
2. In a medium bowl, stir together the flour, the baking powder and salt. Stir in milk and mix until the dough comes together.
3. Knead the dough until smooth and let the dough rest for 10 minutes. Shape the dough into round discs 5 mm in thickness, making a thinner depressed area in the center.
4. Heat oil in a small pan, and fry dough in the hot oil until golden on both sides. 
5. Top fry bread with beans, ground beef, lettuce and cheese. Spoon salsa and sour cream on top.

【筆者感想】
揚げパン(スコーン)は簡便法の揚げ焼きで作ります。小さ目のフライパン全面にやや多めに油を入れます。油が充分熱してから(揚げパンのタネの小片を入れると泡が出る程度)お玉(レードル)で真ん中に揚げパンのタネを入れます。この時、揚げパンの真ん中あたりをお玉で押さえて平らに仕上げておきます・・・って、これ難しい!タネがねばねばしてうまくいかない(笑)。箸だとかスプーンなんかも導入して(手が何本も要りそう)何とか大き目で薄い円形に仕上げます・・・薄くないと膨らんで結構厚くなります。フライパンに入れる前に円形の薄皮に仕上げられればグッドなんですが・・・片栗粉を使ってうまく仕上げられるかも?(次回挑戦してみます笑)。なお、揚げパンのタネは調合してから10分以上寝かしておきます(発酵するらしいです?)。寝かしてる間にタコスを作るんだけどね。
