Sesame Chicken (甘辛チキン)

 My homemade dish called "Sesame Chicken".


Recipe : 3 servings
350 grams chicken breast chopped into bite-size chunks
1 egg beaten
3 tbs. cornstarch
3 tbs. all-purpose flour
1 clove garlic minced
1 tsp. ginger minced
pinch pepper and salt
suitable amount of vegetable oil
***sauce***
1.5 tbs. soy sauce
1.5 tbs. sweet sake (mirin)
1 tbs. sake
1 tbs. sugar
1+ tsp. doubanjiang (Chinese chili bean sauce)・・・豆板醬
2 tsp. tianmianjiang (Chinese sweet bean sauce)・・・甜麵醬
1 tbs. rice vinegar
1 tbs. honey
3 tbs. ketchup (tomato sauce)

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

***garnish***
sesame seeds
green onions chopped
lettuce
sesame oil sprinkled

Directions : 
1. Mix chicken with garlic, ginger, salt and pepper well. 
2. Coat the chicken with cornstarch, then dip in the egg and finally coat it with flour.
3. Add the chicken to a pan over medium heat, turning several times during cooking until well browned. And set aside.
4. Add all of the sauce ingredients to the pan, stir and bubble over high heat. Add the chicken back in and toss in the sauce to coat. Cook for 2 minutes.

【筆者感想】
ご飯がすすむ甘辛チキンは欧米では"sesame chicken"というようです。胸肉でも腿肉でもよいです。油はフライパン全面にやや多めに入れます(揚げ焼きという方法です)。タレの作り方も多種多様で欧米では蜂蜜を加えるみたい・・・そう言えば蜂蜜チキンという料理がありました。なお、豆板醤と甜麵醬はコチュジャンでもよいです。
