Di San Xian (地三鮮)

  My homemade dish called "Di San Xian".


Recipe : 3 servings
3 eggplants cut into large chunks・・・乱切り
2 tbs. cornstarch
200-250 grams potatoes cut into thick half moon・・・半月切り
2 green and/or red peppers cut into small pieces
1 green onion chopped
2 garlic cloves chopped
5 tbs. oil for frying
2 tsp. sesame oil for a garnish

#stir-frying sauce
2 tbs. soy sauce
1/2 tbs. oyster sauce
1/4 tsp. sugar
1/4 tsp. salt
1 tsp. cornstarch
3 tbs. water

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Soak the eggplants in salted water for 15 min. Drain completely and then coat evenly with a cornstarch.
2. In a small bowl, mix all of the frying sauce together.
3. Heat oil in a pan.
4. Place potatoes in and stir fry until well cooked. Then place the eggplant in and gently stir until well cooked. Finally fry peppers.
5. Fry green onion and garlic until aromatic. Place the stir fry sauce in. Fry until each piece is well coated.

【筆者感想】
茄子が油を吸うので油を多めに入れる必要があります・・・多すぎた場合は途中で捨てますが、途中で追加する方が後の処理が楽かと・・・塩とオイスターソースは好みで入れますが無くても問題なし。中国のメジャーな家庭料理だけあって日本人の口に合いますし、美味いです。
