Kung Pao Chicken (宮保鶏丁)

 My homemade dish called "Kung Pao Chicken".


Recipe : 3 servings
350 grams chicken breast cubed
1 tbs. ground ginger
1 tbs. minced garlic
suitable amount green onions chopped
1-2 green bell pepper chopped
1/4-1 chili pepper
2 tbs. soy sauce
1 tbs. lemon juice
1tbs. sake
3 grams chicken broth
1 tbs. sugar
2 tsp. cornstarch (+ 2 tbs. water)
1 tbs. olive oil

(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)

Directions :
1. Combine soy sauce, lemon juice, ginger and garlic in a large bowl. Add cubed chicken and refrigerate for 30 min.
2. Heat olive oil in a large pan. Add chicken to cook until it is no longer pink. Transfer chicken to a plate.
3. Add remaining juice, green onions and bell pepper to the pan and stir-fry. Return chicken to the pan.
4. Stir cornstarch into the pan.

【筆者感想】
酒、チキン味コンソメ、砂糖は好みで・・・激辛が好みな場合は赤唐辛子、生姜、ニンニクを多めに・・・本場のは、紹興酒に特別な酢を入れるようですが、ここでは簡便に作れるようにしました。なお、アレルギーの関係でナッツ類は入れていません。
