My homemade dish called "Stir-fried eggplant with miso".
(注)味噌炒茄子
Recipe : 3 servings
3 eggplants coarsely chopped
2 green peppers chopped
2 red and/or yellow peppers chopped
1/3 bunch shimeji mushroom
pinch chili pepper・・・アジメコショウが好み(あれば)
1 garlic clove finely chopped
1.5 tbs. miso
1.5 tbs. sugar
1.5 tbs. sweet sake
3 tbs. sake
1 tbs. soy sauce
1 tbs. sesame oil
suitable amount green onions if you like
(注)tbs.=table spoon (大さじ) tsp.=tea spoon (小さじ)
Directions :
1. Heat sesame oil in a frying pan... add eggplants, garlic and chili pepper and stir-fry till it comes to soften
2. Add bell peppers and seasonings and stir-fry.
3. Arrange eggplants with miso on a plate.
